Salty Caramel Carrots

We have all heard it: Carrots are good for the eyes! This is because carrots have a high Vitamin A content. Try this delicious and quick recipe that the whole family will enjoy.

Function of Sugar

A pinch of sugar transforms this common, yet nutrient rich household vegetable into glazed goodness.  The aroma and flavour of the carrots are enriched by the sugar….don’t be surprised if your kid asks for a second helping of carrots or any other vegetable cooked this way. 


Ingredients

6 large carrots, peeled, cut into quarters lengthways.
1 tablespoon olive oil
2 tablespoons butter
1 tablespoon brown sugar
2 cloves garlic peeled and thinly sliced
2/3 cup water
Salt and pepper to taste
1 tablespoon fresh thyme leaves.

Method

  1. Heat the oil and butter in a saucepan larger enough to fit the carrots
  2. Add the carrots and cook stirring for 5 minutes, then stir in the remaining ingredients and simmer till just fork tender add a little water if the carrots ok like they are sticking.
